(Serves 4-6)
Ingredients
- 2 lbs. sweet potatoes
- 1/3 c. orange juice
- 2 tsp. fresh ginger, minced or grated
- 1/4 tsp. ground cinnamon
- 1/2 tsp. salt
- optional: 2 T. unsalted butter
Bake sweet potatoes at 350 until tender, 50 minutes or so. Mash or rice them and add the other ingredients. Or put potatoes and other ingredients into a food processor and blend until smooth.
Ginger tip: To grate ginger easily, freeze the knob in a baggie. Frozen ginger grates easily and does not clog up the grater with fibers.
