(Serves 1)
Ingredients
- 1 T. slivered or sliced almonds
- 1/2 c. old-fashioned rolled oats (not instant)
- 1 c. nonfat milk (or substitute, such as water)
- 1 medium apple, cored and diced
- 1 T. seedless raisins
- 1 tsp. brown sugar
- 1/2 tsp. ground cinnamon
Preheat a small saucepan on medium heat for 2-3 minutes, until just hot. Add almonds and toast for 1 minute. Add oats and toast for 1-2 more minutes, until almonds and oats are just golden and almonds give off a nutty aroma. Shake the pan often to prevent burning.
Add milk (or substitute) and bring to a simmer. Stir in the apple, raisins, sugar and cinnamon, then cover and cook 5 minutes, until milk (or substitute) is absorbed, stirring frequently. Serve warm.
